Cake Gerbeau

In 1883 in Budapest, the owner of one of the largest European confectionery shops, Emil Gerbeau, invented a dessert that not only became part of Austro-Hungarian haute cuisine, but also glorified his name far beyond the borders of the empire. Of the many creations of the famous confectioner, this dessert received his name. The cake consists of shortbread cakes soaked in rum syrup and layered with apricot jam and raisins filling. The composition is completed with a coating of dark glaze and walnut.
