I don't like that the honey has a grainy texture with sharp crystals. The linden honey has a high fructose and usually will crystallize with a very smooth crystal, that makes it a creamy delight.
I used the malted rye to make the Finnish dessert mämmi. It turned out just like the original.
Smells amazing. Some of the leaves were crushed unfortunately.
